Enjoy a taste of Thailand in the Lake District this Autumn
The Tongsai Bay and Linthwaite House Hotel to host culinary extravaganza!
In early October 2010, whilst enjoying the autumn colours of the Lake District you will find yourselves transported to the Far East as Linthwaite opens up the kitchen to a team of experts in southern Thai cuisine, from Koh Samui's original boutique hotel, The Tongsai Bay.
For a two week period from the beginning of October, Tongsai Bay's culinary team comprising executive chef Alvin Tan Kian Chee and sous chef Jaturan Ounnahasuwan, will visit the Lake District to join forces with our head chef Richard Kearsley and his experienced team. Together they will fuse the exotic flavours of southern Thailand with the highest quality produce from Cumbria, creating exclusive menus and sharing knowledge of their respective cuisines.
Both ourselves and Tongsai Bay have a long tradition of culinary excellence. At Tongsai Bay, the cuisine was overseen for many years by chef Piengchom Darbanand (known as 'Chom'), a former chef to the Thai Royal household, now almost retired. Whilst new dishes are introduced reqularly, her exacting standards are still strictly maintained and her occasional visits to the hotel are much anticipated. Here at Linthwaite, we are renowned for imaginative cuisine, using the best local produce; previously of The Waterside Inn, Mallory Court and Lords of the Manor, Richard learnt his trade alongside stars of the culinary world. Both hotels also have a strong connection to the late Keith Floyd, who worked on his legendary 'Far Flung Floyd' series with the team at Tongsai Bay, and more recently hosted cookery theatres at Linthwaite.
In addition to hosting mouth-watering dinners here at Linthwaite, the Thai chefs will share their knowledge with the students at the nearby Kendal College, the region's leading destination for hospitality and catering training. They will also take time out from the Lake District, and will head north to Scotland to host a series of exclusive cookery classes at the renowned Cook School at Kilmarnock, Ayrshire. Here they will work alongside chef director Steven Doherty, who began his career at The Savoy in London before working with the legendary Roux brothers at Le Gavroche.
The chef's visit will culminate in a series of events at Linthwaite, at which the chefs will present their dishes through cookery demonstrations and exclusive menus.

Linthwaite lines up a 'Football Free Zone' for World Cup 2010
Linthwaite in England's idyllic Lake District will officially become a dedicated 'Football Free Zone' for the duration of this summer's football World Cup.
For the entire tournament between 11th June and 11th July, we have banned any mention or evidence of football and the tournament taking place in South Africa. While millions of fans will be glued to their TV sets in the hope of glory, many seek an escape from the inevitable penalty heartache and disappointment so familiar to England followers.
To provide welcome respite for those seeking refuge from the beautiful game, Linthwaite has introduced special mini-breaks aimed at romantic couples during which the 'F' word is banned. Any guest who hears a member of staff mention the 'football' word can claim a free glass of Champagne, and guests will be given red and yellow cards to hand out to staff heard using the 'F' word.
Sports supplements will be removed from Football Free Zone mini-breakers' newspapers each day, and guests will be offered free use of the DVD film library to take advantage of the player in every room of the hotel to help avoid sports news bulletins. Special rates include one free night's accommodation on a room and breakfast basis when guests buy two nights dinner, room and breakfast between 11th June and 11th July.
"We've gone to great lenghts to ensure we preserve the serenity for any football widows, and this means creating an exclusion zone from all matters relating to football for anyone wanting to escape the World Cup," said owner Mike Bevans.
The offer will be available for the entire tournament or until the England team is knocked out - whichever comes first.

Linthwaite Attains Gold Environmental Award - January 2010
We're very happy to announce that we have been awarded gold by Cumbria Business Environmental Network for Environmental Excellence in recognition of progress in assessment and control of environmental practice. Basically this means we have been working hard over the last couple of years to reduce our impact on the environment and have put in place extensive recycling programmes and reduced our energy usage.

We are always pleased when guests come back to stay, and even more delighted when members of staff do. Andy was our Head Chef from 2001 to 2004. He left to go back (it’s a habit of his) to the Devonshire Arms, Bolton Abbey, where he had previously been Head Chef. This time he went back, cast off his whites, and donned a suit for his new role as Resident Manager. Five years later he’s back with us as General Manager. Now he’s looking forward to welcoming our guests back.
Dogs Now Welcome - Dog Friendly Hotel
We are delighted to announce that we now have facilities to accept canine companions in two of our ground floor rooms with their own external entrance. The Lake District is obviously such a fantastic place for walking and we had such demand for this service that we changed our policy. New state of the art kitchen for Linthwaite House Hotel - July 2008
Complementing the recent appointment of Head Chef Richard Kearsley, Linthwaite House Hotel, the 32 bedroomed property overlooking Lake Windermere, has now completed work on its £1.3m five bedroomed extension, which includes a naturally lit and fresh air cooled ‘state-of-the-art’ kitchen.
One of the key elements of the new 80sqm open plan kitchen is a 3.5 x 3.5 metre square glass observation window which faces out onto the hotel’s grounds and has been designed to bring natural light into the heart of the workspace, providing a more pleasant and conducive working environment for Peters and his brigade of nine chefs.
Other elements of the new build include a Blueseal cooking suite comprising a solid top oven range, convection steam oven and six burner oven range, while the rest of the kitchen has been divided into separate stainless steal work stations, including separate hot and cold service stations, preparation areas, a fully equipped pastry kitchen area and walk in cold room.
More than three times larger than the original kitchen, this new area has been meticulously planned with different food preparation and cooking areas thoughtfully positioned to give the working space an easy and natural flow.
Commenting on the new kitchen Kearsley said: “It’s not often that chefs have the luxury of cooking in such a naturally lit open space and aside from the obvious benefits to my brigade guests will also get to see inside the heart of the kitchen and be able to appreciate the attention to detail that goes on behind the scenes”.
Mike Bevans, Owner added: “Dining at Linthwaite is very much part of the complete guest experience, with the restaurant attracting casual clientele as well as our in-house guests. In this fast moving business when customer expectations are constantly rising we realised that in order to increase profit levels for the restaurant and rooms still further we needed to invest in a new kitchen. In order to justify the cost we therefore worked closely with the architect to create the five additional guest rooms at the same time, thereby maximising our return on investment throughout this development”.

New Home Grown chef at Linthwaite
Cumbria has always been known as producing a vast array of local produce and this is now extending to chefs! Linthwaite has just appointed a Cumbrian born and bred Richard Kearsley as head chef of the brigade of eight. In the time away from his beloved Lake District, Richard has worked at some of the best restaurants in the UK including Mallory Court (1 Michelin Star), Seaham Hall (3 AA Rosettes) and The Waterside Inn (3 Michelin Stars); and most recently Lords of the Manor Country House Hotel (3 AA Rosettes, 4 red stars). Says Richard: “I’ve always had an ambition to be a head chef at a top hotel in the Lake District so when the position came up at Linthwaite I was delighted – it feels like I’m coming home.”
He is already making his mark on Linthwaite with plans for a kitchen garden and even greater use of seasonal produce.

Is there life after the World Cup?
As some of you may have heard we created a “World Cup Free Zone” at Linthwaite over the last World Cup and were offering complimentary glasses of champagne if a member of staff even mentioned the “f-word” football that is! – We were completely amazed when the world’s press picked up on the story and Linthwaite went global! Mike appeared on TV in France, Russia, Brazil, Japan and on Sky News, BBC Northwest tonight and ITV Granada and national news as well as being interviewed on over 25 international radio stations from Croatia to Australia also including here at home BBC Radio 5 Live, Talksport, BBC Scotland and many regional radio stations too. Members of staff were interviewed live on German national radio, New Zealand radio (5 am for poor Mary!), and Irish radio to name a few, and articles about Linthwaite were published in newspapers all over the world from Australia, India, Japan across to Canada and the United States including the New York Times. We’ve never known anything like it!
